Calum Franklin: "We are opening a restaurant in the heart of Paris!"
Calum Franklin, formerly the executive chef at London's Holborn Dining Room, is set to open a new restaurant in Paris in February 2024.
The establishment, named Public House, is described as a British brasserie and will be located on Rue Daunou in the Opera district.
In a post on his Instagram, Calum said: "So the cat is officially out of the bag... we are opening a restaurant in the heart of Paris!"
"Expect classic British dishes in a 3 storey building with beautiful interiors designed by Laura Gonzalez. Who's excited? Because I'm excited," he added.
Public House will span three floors and feature a unique design that blends the ambiance of a traditional Parisian brasserie with the charm of an English pub.
Calum's menu will showcase comforting dishes reminiscent of his renowned pies from Holborn Dining Room, alongside items like scotch eggs and indulgent desserts such as sticky toffee pudding and ginger and clementine trifle.
This venture marks Franklin's first restaurant opening since his departure from Holborn Dining Room in 2022, as he shifted his focus towards new culinary projects.
During his tenure at Holborn Dining Room, situated within the Rosewood London hotel, which began in 2014, he introduced the famous Pie Room in 2018.
His inventive pie creations, often inspired by antique pie tins found in the hotel's basement, garnered significant attention on social media.
