Brompton Food Market duo to open new London pub

The Staff Canteen
The duo behind Brompton Food Market are to open new pub The Hour Glass, this September, in South Kensington. An intimate, neighbourhood pub serving great pints and fantastic food with Luke Mackay and David Turcan at the helm.Brompton Food market Luke has been in the food and wine business for 17 years, latterly as Borough Market’s demo chef and in-house writer. He was responsible for taking over and turning around the Royal Oak in Wiltshire – now rated as one of the best pubs in the country. David’s expertise lie in marketing, communications and business development allied with amazing, albeit amateur skills in the kitchen. They met 20 years ago at Reading University; a lifelong friendship forged in many inferior pubs to The Hour Glass. The Kitchen is headed up by Tim Parsons, who has experience working with Michelin-starred chefs such as Bruno Loubet and in restaurants such as The Ebury. Tim has also worked in some of London’s best food pubs and his food philosophy is intrinsically linked to Luke and David – “the best tasting ingredients, left alone!” The menu will be born of the seasons, created by Tim and Luke from the best ingredients they can find and using the same superb, artisan producers that supply Brompton Food Market. Every purchasing decision the team make is based solely on taste and highlights on the menu will include:
  • Sea bream with cauliflower
  • Burnt leeks and brown shrimp
  • Flat iron steak with dripping chips and bone marrow gravy
  • Chocolate porter cake with milk ice cream and honeycomb
the hour glassThe word ‘Gastropub’ was banned from all design meetings as original features have been uncovered and allowed to shine with a dining room with an open pass kitchen and 28 covers. London is built around its boozers, each with a story to tell. Against a backdrop of yet more pub closures, making way for more monochrome housing, it is with huge delight that we invite you to feast your eyes (and taste buds) on The Hour Glass, built in the best of London pub traditions in the heart of South Kensington.
