How to create a Wild Atlantic Prawn, rocket and blood orange recipe

Hello my name is Russell Brown from creative about cuisine and the dish that we're going to demonstrate for you today is showcasing wild Atlantic prawns so the actual dish is a salad of prawns with blood orange rocket and a chilli dressing and the important thing I think is with the prawns they are a wild product, slow grown, they take six years to reach this size and that you don't want to overpower the flavours.

So I've got a base dressing here of mustered little bit of maple syrup, white wine vinegar and serve either grape seed or groundnut oil something very neutral so we're just going to blend this into the dressing I’ve already made, and then we’ve got a little bit of chilli here and then we're going to blend into a dressing as well and then we'll just use some little gem lettuce and then we can all add some rocket to that give a little bit of dressing  I suggest in a bowl.

We can just start building our solid up just a little bit of seasoning on the prawns themselves, then drain off some of our blood orange segments and then just add those to our dish, and then were just going to mound some of those to the dish, high in protein and low in fat so portion wise you can be quite generous with them and that's our prawn salad blood orange rocket and the chilli dressing.
