How to create a Wild Atlantic Prawn and avocado with romesco crumb dish.

Hello my name is Russell Brown from creative about cuisine and today we're working with some wild Atlantic Prawns and the dish we can do is get a little bit of a Spanish theme to it, just really trying to showcase the prawns fantastic sweet flavour full of protein very low-calories, low-fat and lots of omega 3 in them and what you don't want to do is overpowered the flavour we've made sherry vinegar dressing so really classic vinaigrette, little bit of mustard, little bit of honey or maple syrup and px vinegar and some neutral oil so a ground nut, a grape seed something like that.

I've got some ground almonds here we've cooked some garlic with some bread crumbs and we've just finished this with a little bit of smoked paprika in there and we're just going to mix our ground almonds into that, we're going to take our avocado and you want half an avocado and on a portion we can then just transfer that line of avocado little bit of seasonings that and the prawns were going to treat really simply again.

So I just want a little bit of seasoning and we're going to drizzle a little bit of oil onto them and then we are going to add the prawns for the avocado, come around and then we’ve got a crumb which we’re going to add and this will just add that lovely crunch to the dish, little bit of that vinaigrette would just go at this rather than sort of binding they the mix with it which is a drizzle this across the top and then just a few leaves we've got some nice little watercress tips here so that's our wild Atlantic Prawns with a sherry vinaigrette and a romesco crumb served with some nice creamy avocado.
