Here at The Staff Canteen, we feature a different member every month we think deserves to be celebrated - this month’s winner is Josh Stanton

1) Current place of work, position

Executive Head Chef - The Kia Oval/Surrey County Cricket Club

2) What is your cooking style and what should people expect from your food?

I'd say my style is modern/classic British, seasonal, with a focus on sustainable ingredients. I like to lift dishes with some Asian flavours, but working at an international cricket ground I often have to adapt to who is playing and produce food for many different nationalities, always striving to keep pushing myself and the team forward and trying new things. 

3) What is your favourite dish to cook and why?

I don't really have a favourite dish, I love developing all kinds of dishes with my team, from writing menus to then seeing them being produced and the smile on guests' faces when they are eating the food.

4) Name a food item/dish/ingredient that isn't considered "cheffy" but that you love to eat

Wood-fired homemade pizzas (with pineapple, obviously).

Eton mess, white chocolate cremeux, and pickled berries

5) What do you like about The Staff Canteen app and website?

It's a great platform to showcase what you and others do, networking, and seeing new trends in the industry and upcoming talent.

6) What are your plans for the future?

Just to keep pushing, making sure I’m proud of what we serve for 1000s on match days and beyond.

I’m also part of an apprenticeship with Marcus Wareing through Levy UK which started last August and ends next April so who knows what that might lead to!

7) What would you like to see done to protect hospitality businesses from the cost of living crisis?

I think a reduction in business rates and reduced VAT. In general, more support should be given to hospitality businesses as they make up such a crucial part of society and provide so many jobs, so it's important they are protected.
