Biography

Allister Barsby's culinary journey began in his hometown of Whitstable, where he was inspired by the renowned Wheeler’s Oyster Bar. At the age of 14, he took a Saturday job at Wheeler’s, which ignited his passion for cooking. Under the mentorship of head chef Mark Stubbs, Allister developed a passion for cooking that would shape his career. His dedication and talent led him to work with some of the most prestigious chefs and establishments in the UK, including Read’s Restaurant in Faversham, Gidleigh Park Hotel in Devon, and The Bath Priory.

At just 24 years old, Allister became the head chef at Gidleigh Park, where he maintained two Michelin stars and five AA Rosettes. His impressive achievements continued as he took on the role of executive chef at Grove of Narberth in Pembrokeshire, where he upheld three AA Rosettes and opened a second restaurant.

Influential Mentors and Philosophy

Throughout his career, Allister has worked with several renowned chefs, including Michael Caines at Gidleigh Park, where he spent eight years. He also admires chefs like Philip Howard, Brett Graham, Thomas Keller, René Redzepi, and Raymond Blanc OBE. Allister's cooking style is modern British with European influences. He emphasises using local, seasonal ingredients and enjoys the creative process of developing new dishes.

The Birth of Hide and Fox

In 2018, Allister Barsby, along with his business partner Alice Bussi, embarked on a new venture: Hide and Fox. Located in the heart of Saltwood, this restaurant quickly became a beacon of fine dining in Kent. The duo's combined expertise and passion for food and hospitality have created a dining experience that is both intimate and exceptional.

Hide and Fox offers a menu that reflects Allister's commitment to quality and innovation. The dishes are crafted using carefully sourced seasonal ingredients, ensuring that each plate is a celebration of the best produce available. Some of Allister's notable dishes at Hide and Fox include south coast mackerel with kohlrabi, horseradish, grapefruit, coriander, Venison with swede, golden raisin, jasmine, red wine and Middle White pork with parsnip, Roscoff onion, black garlic, and vanilla. These dishes exemplify his innovative approach and dedication to using the finest ingredients.

Awards and Accolades

Since its inception, Hide and Fox has received numerous accolades. In 2021, the restaurant was awarded its first Michelin star, and in the 2025 Guide, a second star was awarded, testaments to the exceptional quality of the food and dining experience. Additionally, the restaurant has been recognised with three AA Rosettes, further cementing its reputation as one of the top dining destinations in the region.
