Will Holland is the new executive chef at The Atlantic Hotel in Jersey
Will Holland is the new executive chef at The Atlantic Hotel in Jersey replacing current executive head chef Mark Jordan.
Will will leave his position as head chef at Coast Restaurant, which has two rosettes in the AA Restaurant Guide, in Saundersfoot, Pembrokeshire and join the award winning Ocean restaurant from October.
Patrick Burke, managing director and owner of The Atlantic Hotel, said: “We are thrilled to be welcoming Will Holland to our team in October. There was a great deal of interest in the position from some of the finest young chefs in the country, however, Will was the stand-out candidate and we are delighted to have secured him. We have great admiration for everything that Will has achieved in his career to date and have no doubt his appointment will further strengthen Jersey’s growing culinary reputation.”

Will has been with Coast Restaurant for over three years when he moved to P.emborkeshire in 2014. During that time he has seen the restaurant be named the AA Restaurant of the Year in Wales 2015-2016 as well helped the restaurant gain two rosettes in the AA Restaurant Guide and recognition in The Good Food Guide and The Michelin Guide.
Will said: “I've enjoyed the last 3 and a half years heading up Coast Restaurant immensely and it was a huge decision for me and my wife to move on. It was a massive challenge setting up the restaurant and starting it from scratch but one I enjoyed every moment of. I'll take all my experiences with me. I wish everyone involved with Coast Restaurant the very best for the future."

The Seren Collection, which owns Coast Restaurant, are now searching for a replacement head chef to run the kitchen.
Further investment is planned for the restaurant through the Autumn and Winter and promises to give the new head chef the opportunity to reinvent their offering.
Will achieved his first star in the Michelin Guide when he headed up the kitchen at La Bécasse as well as earning the restaurant three rosettes in the AA Restaurant Guide. He was also named one of the “ten most influential chefs of the decade” in the Good Food Guide.
It was also announced earlier this week that Will had made the top 10 finalists for The National Chef of the Year 2018.
