Top recipe pick of the month
The most popular recipe this month was "My cod, I bet me Mam has seen some trotters" - David Coulson's fish course recipe for Great British Menu 2018. Inspired by his mother who has worked as a chiropodist in the NHS for 22 years, David served a side of North Sea cod with dehydrated pig's trotters and brown crab.

The most read article on The Staff Canteen this month was the news that the Michelin-starred restaurant The Cross at Kenilworth had been fined over £25,000 after an apprentice chef suffered a severe scalding. The 18-year-old chef was cleaning an extractor fan when his foot slipped into a fryer full of hot fat. He sustained serious injuries as a result of the accident and the pub pleaded guilty in court.
What foods are in season in September?
As the seasons change, there's a bounty of new Autumn ingredients coming in this month including plums, marrow and autumn lamb. Make sure you upload your seasonal recipes and images to the Chef+ app, and we'll share the best ones on our social media channels.
There's also an array of exciting fish and shellfish seasonal species at the moment, including king scallops, catfish and mackerel.
Member of the Month August 2018
Our Chef Plus Member of the Month for August is Filip Poon. Filip is sous chef at the newly opened Restaurant NOI in Stockholm, Sweden. He loves inspiring people with his colourful, creative plates and posts a lot of them on his Instagram account (@filipp8n)
For his prizes, Filip won a copy of At Home: Easy to Cook Recipes from Nigel Haworth and friends and The Staff Canteen 10th Anniversary mug.
