UK trio set to compete at 2025 Pastry World Cup

United Kingdom will have a team of three in this year’s Pastry World Cup in France.

The trio are Wallace Cheuk Yin Li, of The Dorchester Hotel, Rémy Pugeot, from The Raffles at The Owo, and Glen Iain Snowball-Sharman, who works at Le Manoir aux Quat’Saisons in Oxford.

UK are one of 18 nations to have qualified for the final, which takes place on January 24-25 in Lyon.

The theme for 2025 is national heritage, with countries encouraged to honour their country and culture through their creations.

The Pastry World Cup brings together the finest dessert chefs in the world, with each team of three including an ice specialist, a sugar expert and a chocolatier.

Glen is the UK’s ice specialist. He started at Pennyhill Park with chef Dennis Drame, where he began winning competitions.

He joined Raymond Blanc’s two Michelin-starred Le Manoir around five years ago, where he now works as senior sous.

Wallace is the chocolate expert for the UK team. Originally from Hong Kong, Wallace is hoping to help the UK clinch a first podium finish, having placed third in the European selections alongside Rémy last year.

Rémy served an apprenticeship at Hostellerie du Chapeau Rouge in Dijon in 2014, before moving to England. Spells at Sketch London and JW Marriott Grosvenor House followed, before becoming executive sous chef at Raffles. He will be responsible for sugar work in Lyon.

Each team will have nine hours to create three frozen desserts, 10 restaurant-style desserts, 26 sweet creations showcased during the Show Chocolat and a buffet.

The artistic section will test chefs to produce a chocolate artistic creation (165cm), one sugar artistic creation (165cm), and one sculpture water ice creation (50cm).

Extra points will be awarded for sustainability, such as limited power use, use of reusable kitchen paper and limitation of waste.

UK have been drawn to get underway at 9.21am on day two of the competition.

There will be a panel of seven judges, namely Claire Santos Lopes, Fabrizio Mellino, Narae Kim, Nicolas Lambert, Vicky Lau, Yann Couvreur and Renaa Sven Erik.

Michael Kwan, executive pastry chef at The Dorchester, will represent the UK on the team jury, judging all other nations apart from his own.
