TSC Chef of the year 2021 Roy Brett is the chef and owner of Edinburgh restaurant Ondine.

Roy’s career has seen him work in locations far and wide, starting out his career at the Caledonian Hotel before heading to London to work with Mark Hix and Rick Stein. Ondine has enjoyed thirteen years of success under the chef’s stewardship, consistently staying at the top of Edinburgh's ever-changing food scene.
