Toby Burrowes steps down as head chef of Michelin-starred Elystan Street
Toby Burrowes has announced on Instagram that he has 'stepped down' as head chef of Phil howard's Michelin-starred, Elystan Street.
He has been in the role since the restaurant opened in 2016, previously working for four years under Phil at The Square.
He wrote a post on his account saying: "Well the time has come, I have stepped down as head chef at Elystan Street, due to a professional difference of opinion. I’d like to thank @philchef for taking me in straight off the boat and under his wing at The Square all those years ago, and for choosing me as the only one he took with him to @elystanstreet to open it."
He added: "I wouldn’t be where I am in my career without him and we have some brilliant memories, best of my life...SO FAR!! And the team, they were the back bone, the operators! so a huge thank you past and present. As it stands I’m taking a short break from the stoves and I’ll be looking to step into something where I can spread my wings under my own name."
Phil opened Elystan Street with Rebecca Mascarenhas and it won its first star in the Michelin Guide 2018.
He was Head Chef and co-owner of The Square when it opened in December 1991, and saw the restaurant move in February 1997 to its current address in Mayfair from its previous site in St James’. Prior to founding The Square, he worked with Marco Pierre White at Harvey’s, Simon Hopkinson at Bibendum and with Roux Restaurants Ltd.
