Roux Scholar Paul O'Neill is the new head chef at Andre Garrett at Cliveden
André Garrett, Executive Chef of Cliveden House, in Berkshire, has announced the appointment of Paul O’Neill as new Head Chef of the restaurant, André Garrett at Cliveden.
A Roux Scholar (2013), Paul has an impressive pedigree that spans roles at diverse establishments such as Berwick Lodge Hotel’s Hattusa Restaurant in Bristol, Ashdown Park Hotel in East Sussex, The Ostrich in Colnbrook, Berkshire, Felbridge Hotel in East Sussex, and The Goodwood Hotel in Chichester in their gastro-pub.
The critically-acclaimed 68-seat André Garrett restaurant has an 8/10 rating in the 2018 Waitrose Good Food Guide (ranked number 19 in the UK), is number 22 in the Square Meal UK Top 100 Restaurants 2017, and has achieved three AA rosettes in the AA Restaurant Guide 2018.
Paul will join Cliveden from mid-November 2017. He started his culinary career in 2001 at Claridge’s in London as a Commis Chef for room service, the bar and restaurant, and quickly progressed to First Commis on banqueting. Junior positions followed at The Angel Hotel in Midhurst, then at Exsurgo Restaurant in Midhurst, the Lodge de Village in Méribel, France, for a winter season (as head chef for an Italian restaurant in the ski resort), and The Chequers Inn, in Rowhook, West Sussex, for a year (2006-7).
Following his achievement as a Roux Scholar, Paul did a three-month stage at Pierre Gagnaire in Paris. He was also a finalist of National Chef of the Year (2014. A keen supporter of training and development schemes in the hospitality industry, Paul has worked on the launch of the Chefs’ Forum Academy at both Weston College in Weston-Super-Mare and Gloucestershire College.
