Roux Brew now being served

A new beer, “Roux Brew”, has now been added to the drinks list at a number of restaurants including two Michelin-starred Le Gavroche.

Following a lengthy search process, Fourpure Brewing Company from South East London were given the honour of producing the beer with the famous Roux name to be used in the summer season across their branch of restaurants.

As well as Le Gavroche, Roux Brew will be served in Roux at Parliament Square, Roux at the Landau, Roux Fine Dining and Chez Roux restaurants.

The beer was selected by Michel and Albert Roux along with a team of judges following a competition organised with the London Brewers Alliance.

Talking about Fourpure’s brew, Michel Roux Jr said: “The freshness of the grapefruit and orange zest and coriander seed really stood out – this is a beer that has a zing about it, and we feel it will partner perfectly with the flavours of our summer menu.”

John Driebergen, head brewer at Fourpure, was in charge of creating the 5.6 ABV Roux Brew and he said: “The beer is unfiltered and unfined, meaning when the beer is bottled there is still yeast in suspension so it bottle conditions.

“It’s naturally carbonated during the fermentation and then we make any minor adjustments we need to, in order to achieve the perfect level of carbonation.

“The recipe for this beer uses premium malts and carefully chosen Styrian Goldings hops. We zested the grapefruits and oranges by hand and chose an authentic Belgian yeast strain specifically for this beer. The provenance of ingredients is really important to us.”

A competition for a second brew for winter menus is planned for the autumn.
