VIDEO: Paul Foster leaves Mallory Court and launches Kickstarter to fund new restaurant

Paul Foster stepped down as head chef at The Dining Room at Mallory Court in Warwickshire this week.

Today he has announced he is hoping to open his own restaurant with the backing of funds from a Kickstarter project.

He said: "It's always been my goal to have my own restaurant and it is now the time I believe I can achieve that."

He added: "The aim of my Kickstarter is to get your help raising funds to make my dream a reality.

"I think the restaurant will be a great success for a number of reasons but the biggest advantage I have is the partnership with my wife. Rhiain.

"Like most big projects I know it can take time and sometimes things come up that you don't anticipate so this is subject to change."

Paul moved to Mallory Court in 2014 from Tuddenham Mill in Suffolk, building on the hotel's reputation for fine food. He has trained under the watchful eyes of Raymond Blanc at Le Manoir aux Quat’Saisons, and spent two years under the tutelage of Sat Bains at Restaurant Sat Bains in Nottingham.

Speaking to The Staff Canteen he said: "It's about me wanting that next step with my own place.

"I'll be staying around the Warwickshire area and it's a big risk for me but it's exciting...and a bit nerving!"

On Mallory Court he added: "It's been a great job and I wasn't looking to leave, my CV wasn't out there."

Mark Chambers, managing director of Eden Hotel Collection, said the hotel has undertaken a review of its food and beverage structure alongside the development of a £6m spa, which is the first full-scale spa to be undertaken by the group.

He said: “We’re now looking forward to developing a multi-faceted offering across the dining room, brasserie and our new Elan spa, which is due to open early 2017.

“This is an excellent opportunity for a talented and ambitious head chef to join the team and take Mallory Court to the next level, working alongside our highly respected food and beverage director Simon Haigh.”
