Nik Chappell replaces Shane Hughes as head chef at Tudor Room

Nik Chappell is the new head chef at the Tudor Room restaurant at Great Fosters Hotel in Surrey.

The move comes following Shane Hughes’ departure at the end of December just seven months after launching the new fine dining establishment.

When The Tudor Room reopens on 21 January following a Christmas and New Year break, it will be under new stewardship in the shape of former Michelin-starred chef Nik Chappell.

Richard Young, Managing Director of Great Fosters Hotel, said: “We are extremely proud of the success of the Tudor Room to date and with all the foundations now in place I am looking forward to Nik taking the restaurant to the next level.

“Having done so well in his career so far, outlined by his achievements at L’Ortolan, I am thrilled that he has agreed to progress his career as Head Chef of the Tudor Room.”

Nik previously worked at L’Ortolan restaurant for three years and was awarded four AA Rosettes in recognition for his cooking. This combined with the maintaining of a Michelin star throughout his employment at L’Ortolan serves as a true certification of Nik’s capability as a chef.

Despite being a new restaurant, the Tudor Room has been extremely well received and has already received high critical acclaim.

The intimate 24 cover fine dining restaurant offers a range of dishes and adapts its menus to change with the seasons, using a lot of fresh ingredients picked from the estate at the Great Fosters Hotel.
