Michelin Guide UK 2025: Three stars for Moor Hall

Mark Birchall’s Moor Hall has joined the list of three-star restaurants as the Michelin Guide 2025 announced the list of new Michelin stars and green stars across Great Britain and Ireland.

The live ceremony took place at Kelvingrove Art Gallery and Museum in Glasgow.

A total of 1,147 restaurants were included in the selection, including 220 starred ones, with Moor Hall in Lancashire announced as the Guide’s tenth three Michelin star restaurant.

Michelin said: “Mark Birchall and his team have continued to hone their craft and have now achieved new levels of excellence. The ingredients, many from the kitchen garden, are outstanding; the chefs’ culinary technique is hugely impressive; and the judgement of flavours, of when to prioritise simplicity and when to add complexity, is exemplary.

“The Michelin Guide inspectors particularly enjoyed the classically based turbot cooked in brown butter, with seasonal kuri squash and Mylor prawns.”

NEW TWO STARS

Three restaurants have been newly-awarded two Michelin stars, namely The Ritz, with an emotional John Williams MBE receiving a standing ovation as he came up to collect his jacket. Humble Chicken and Hide and Fox also received two stars.

NEW ONE STARS

Meanwhile, there are 22 new one-star establishments. They include Stuart Ralston’s Lyla, Tom Barnes’ Skof in Manchester and Plates by Kirk Haworth, which becomes the first vegan Michelin-starred restaurant in the UK. There was also a first Michelin star for Welsh capital Cardiff, thanks to Tom Waters at Gorse.

Jason Atherton’s recently opened London restaurant Row on 5, where he works with Spencer Metzger, also received a star.

The rest of the new one stars were: AVERY, The Morrison Room, Ballyfin, LIGИUM, Wilsons, 33 The Homend, Starling, Mark Poynton at Caistor Hall, Forge, OMA, AngloThai, DOSA, Mauro Colagreco at Raffles London at The OWO, 64 Goodge Street, Caractere, Lita and Cornus.

GREEN STARS

Five restaurants have been added to the Michelin green star list for their commitment to sustainable gastronomy. They were Jericho, Native, Homestead Kitchen, Wild Shropshire and Pythouse Kitchen Garden.

Meanwhile, 36 restaurants were announced to have received a Bib Gourmand, which recognises good food at moderate prices.

Young Chef Award: Ash Valenzuela-Heeger, Rabbit Riverine

Service Award: Jasmine Sherry, The Fish Shop

Sommelier Award: Zsolt Lukacs, Darog

Opening of the Year: Jorge Paredes, OMA
