Michelin green star pop-up to offer ‘fast food through one cow’
Michelin green star-restaurant Where The Light Gets In has launched Humbug, a pop-up creating 'fast food out of one cow'.
Where The Light Gets In is currently closed for renovations, allowing the team to explore “a series of experimental dining experiences” in the meantime.
The sustainability-focused Stockport business will be taking over The Bungalow at Kampus, Manchester between January 10 and February 2.
Humbug “explores the notion of fast food through one cow”, adding: “We consider the historical and social impacts of fast food and how a city sustains itself.”
The announcement continued: “Utilising the whole of one traceable animal is a response to the lack of transparency in much of what we eat in our cities today.
“Over the next month, we will tell the story of the cow and all of its part, with its relevance to the history and future of fast food.”
The cow in question is Maraschino, a 30-month-old Red Poll bullock from Helen Arthan’s farm in Malpas, Cheshire. Humbug aims to create 1,200 burgers.
Where The Light Gets In was launched by Samuel Buckley in 2016 with a £25,000 loan, no sign, no printed menu and no printed wine list. It was awarded a green star in 2021.
A Michelin green star highlights restaurants at the forefront of the industry when it comes to their sustainable practices.
Samuel previously competed in the north west heat of BBC’s Great British Menu, back in 2020.
He started working in kitchens as a teenager, getting a job with Gary Rhodes whilst at college.
Samuel went on to work for Michelin-starred Juniper, with Paul Kitching, before a spell with Simon Rogan at L’Enclume.
Head chef at Where The Light Gets In is Callum Higgins, who joined the company in 2020.
Humbug is open from 12pm-11pm, seven days a week. Walk-ins, reservations and takeaways are all available.
