Launch date set for Jonny Lake and Isa Bal's restaurant, Trivet

Jonny Lake and Isa Bal's upcoming London venue, Trivet, is set to launch on October 29th. 

The restaurant , wine bar and cellar at the Snowsfields Yard development in Bermondsey, promising informal fine ingredients and specialist wines at the hands of the former Fat Duck crew,  is now accepting reservations.

The much-awaited restaurant will offer an à la carte menu featuring dishes inspired by the duo's travels - and will include Tuscan Red Mullet, Pici and Artichokes; Lyonnais Chicken with a Vinegar Sauce, Trompette mushroom, mashed potato and glazed turnips; and Japanese“Hokkaido Potato” Baked potato mille-feuille, sake and white chocolate mousse, butter and sake gelato.

Additionally, the wine bar will have its own menu of small plates, snacks and main dishes available all day.

About the menu, Jonny Lake said: “Isa and I have travelled extensively and are always inspired by the extraordinary culinary history and international diversity around us.” 

“We also share a passion for the creative process where we start with a simple idea and then explore countless flavour and texture combinations until it evolves into something new."

Former sous-chef at The Fat Duck Michele Stanco will be the head chef at Trivet, while former assistant manager at The Fat Duck, Melissa Fergus, will be the restaurant manager.

Since he began working in kitchens, Michele, originally from Frigento in the Campania region of southern Italy, has held positions at several Michelin-starred restaurants  including Antica Corte Pallavicina with Massimo Spigaroli.
 
He relocated to the UK to work at The Fat Duck in Bray, where he met Jonny Lake and began working in the pastry department. After two years he was promoted to sous chef and in 2015 he worked restaurant's relocation in Melbourne.  
 
After 5 years at The Fat Duck, he became a development chef as well as working with Jonny on various events.
