maze celebrates ten years with a seven course tasting menu over ten weeks
After ten years of fine dining in the heart of Mayfair, maze and the Gordon Ramsay Group are to celebrate a decade of service with a seven-course tasting menu, available for ten weeks.
Head chef Alex Thiebaut’s special menu features a selection of maze’s most popular, iconic and innovative dishes and is available from 9th September at £75 per person.
Often regarded as the restaurant that launched the small plate revolution, maze is built on classic French foundations with strong Asian influences. Thiebaut’s dishes encourage exploration and often traverse the globe whilst a stunning selection of sushi comes from the skilled hands of Sushi chef Gohei Kishi.
Signature dishes returning to the menu include:
English breakfast: Served in a delicate eggshell, Alex has recreated a refined version of one of his favourite dishes, the traditional English Breakfast, with egg, bacon lardons and slivers of mushroom accompanied by perfectly crisp soldiers.
Lobster dumpling: Inspired by Gordon’s signature lobster ravioli dish, Alex offers a clever re-interpretation with spicy and fresh Asian flavours, serving a lobster dumpling with scallop, salmon and miso royal.
Chargrilled octopus: Alex has made this his memory of summer trips to Perpignan as a child, where he would fish for squid with his father and cook on the grill straight from the sea. In collaboration with maze sushi chef Gohei, octopus is served in oyster sauce, squid ink and Buddha’s hand.

The seven course tasting menu is available for lunch or dinner at maze from 9th September until 18th November 2015. There will also be a maze icon 5-course set menu available during this period for £55.
