Mathew Sherry named head chef of Michelin-starred Number One at The Balmoral

Edinburgh hotel The Balmoral has named Mathew Sherry as the new head chef of its Michelin-starred restaurant, Number One.

Taking over from chef Mark Donald, who has been hired as the head chef of the Lalique Restaurant due to open at The Glenturret Distillery this summer, Edinburgh- born Mathew joins Number One from his role as head chef of Michelin-starred Northcote in Lancashire.

Prior to working under Lisa Goodwin-Allen at Northcote, Mathew spent seven years working at the now-defunct, then Michelin-starred Castle Terrace restaurant under chef patron Dominic Jack.

As the head chef of Number One at The Balmoral, Mathew will continue to showcase seasonal Scottish produce, having developed a new 3-course menu and 7-course seasonal menu for the restaurant's reopening.

Commenting on the new appointment, The Balmoral’s executive chef Gary Robinson said:  “Excellence is at the heart of everything we do at The Balmoral and Mathew brings this ethos in abundance. His flair and classical training, coupled with his passion for incredible Scottish produce, makes for an exciting chapter ahead for Number One.”

Mathew Sherry added: “I am honoured to return to my home city to head up the kitchen at such an iconic restaurant and work with the many seasoned professionals already here at The Balmoral.

"The detail on each dish has been carefully designed, from sourcing seasonal ingredients to the way they are displayed and plated, everything has been thoughtfully considered. I am thoroughly enjoying working closely with Restaurant Manager, Emma Lonie and her established front of house team. We will ensure that we continue to deliver a truly special experience for every guest.”

Number One at The Balmoral first opened in 1997 and received its first Michelin star in 2003, which it holds to this day along with 4 AA Rosettes for 2021.
