Following on from last year's success, the popular Food on the Edge festival, in Galway, will be back again in October 2016 with more international leaders in the world of food.

JP McMahon

Massimo Bottura, chef patron of three Michelin-starred restaurant, Osteria Francescana and former Great British Menu contestant and chef patron of Man Behind the Curtain, Michael O'Hare, have already been confirmed for this year's Food on the Edge symposium in Galway City. Joining them will be; Daniel Clifford, Timothy Hollingsworth, Daniel Burns and Shaun Hill, among others.

Discussing the success of last year's Symposium Director, JP McMahon said: "It was an incredible almost surreal experience. Each chef was given the opportunity to deliver topics that centered on the future of food they discussed their ideas, shared their fears, their dreams, their dreads and regrets from their careers. There was a core theme, however, which resonated strongly across the two days and that was ‘responsibility’. Responsibility in the way we source food, waste food, fish for food and supply food was passionately debated."

Last year’s event in Eyre Square, Galway city, saw 40 of the best international chefs attend The Food on the Edge symposium listened to by over 350 people each day. Audience members included food enthusiasts, chefs, restaurateurs and some of Ireland’s biggest names including Darina Allen, Dylan McGrath, Neven Maguire and a host of others who cited it as an unmissable and inspirational food learning event for anyone interested in food and how we eat. Sally and John McKenna of The McKenna Guides awarded Food on the Edge with Food Event of The Year 2015.

Talking about the chosen speakers, JP said: “They are leaders that we look up to for inspiration. It is important for us to create a sense of continuity. Rather than only invite new chefs to discuss the future of food, each year a
number of past speakers will return to reflect on their previous presentation and assess the change or development of their thought and practice."

Ticket prices for the two day event includes lunch on both days, entry to Monday night party where the audience gets to meet and mingle with speakers. Early bird tickets are also available until July. Tickets can be purchased from www.foodontheedge.ie
