Maciej Lesiewicz replaces Emma Underwood as Restaurant Manager at The Pem
Maciej Lesiewicz brings with him a wealth of experience in fine dining and Michelin-starred restaurants, having spent the last eight years working at renowned restaurants in London.
Starting his London career at Outlaw’s at The Capital under Nathan Outlaw, Maciej moved to the two Michelin-starred The Square in Mayfair.
From 2016 to 2020, he worked with Jason Atherton across his collection of restaurants, including Pollen Street Social, Little Social, and at the five-star Biltmore Hotel.
Following the announcement of his new role, Maciej said: “I believe The Pem is outstanding and I’m incredibly proud to have joined the team and to be able to work alongside an incredible chef like Sally Abé.
He added: "I really pride myself on a personal service, and I can’t wait to meet all of our guests and give them the full Pem experience.”
Before arriving to the UK, Maciej worked in Rome, Italy, where he grew up having moved there at a very young age from Poland.
A Great Background and an Impressive CV
Commenting on the new appointment, the restaurant's Sally Abé said: "All of us here at The Pem are very excited to have Maciej starting with us. He comes from a great background with a very impressive CV, and I know the restaurant and our guests will be in great hands with him.”
The Pem is Sally Abé’s fine dining restaurant set within the Conrad London St James, thoughtfully constructed with an art deco inspired design, with a spectacular and spacious main dining room seating 70, and The Harben private dining room seating 22 guests.
The restaurant name is inspired by suffragette Emily Wilding Davison, whose family used the pet name ‘Pem’ for her and celebrates generations of pioneering women leading from the front. The Pem was awarded ‘One to Watch’ at the National Restaurant Awards 2021.
It's understood that General Manager Emma Underwood has now left The Pem to pursue new opportunities.
