L'Atelier de Joël Robuchon to serve special Slow Food Forgotten Foods menu for the London Restaurant Festival
Xavier Boyer, executive head chef at L'Atelier de Joël Robuchon, London, will be serving a special
Newly appointed as the 125th Slow Food Chef Alliance member, Xavier’s programme is dedicated to protecting traditional foods from small scale producers that are under threat. His spontaneous approach to cooking means that he will be presenting some of the season’s very best Forgotten Foods in a whole new light.
Main dishes will include roasted cod bouillabaisse with traditionally grown Jersey Royal potatoes, stuffed Shetland cabbage with braised ox cheek, and crispy Gloucester Old Spot pig belly served on Du Puy lentils. And his deserts will include Saltcote Pippin apple crumble served with vanilla ice-cream.
Xavier explains; “It’s such an honour to work with these incredible Forgotten Foods and the London Restaurant Festival is a wonderful opportunity to showcase them to food lovers in London. As well as our food menu, we will be serving special red and white Slow Wines to accompany the dishes.”
