Joe Holness to open new restaurant in London department store
London’s Liberty department store will soon welcome Seventy Five at Liberty, a new restaurant led by Joe Holness.
In September 2016, Joe joined Fera at Claridge's, the Michelin-starred restaurant led by chef Simon Rogan, where he served as a chef de partie.
He also became part of the opening team at Da Terra in January 2019, a restaurant in Bethnal Green's Town Hall Hotel that has since earned two Michelin stars.
Now, in a joint venture with Goose + Berry, the restaurant marks Liberty’s 150th anniversary, taking its name from the year it was founded - 1875.
Spanning 1,800 sq ft with 84 covers, the new restaurant will serve brunch, lunch, afternoon tea, and early supper.
Joe's modern British menu features dishes like goat’s cheese croquettes, torched mackerel, Swaledale chicken, and Hampshire pork chop with salsa verde.
Head pastry chef Lizzie Ross will oversee afternoon tea, inspired by Liberty’s Arts and Crafts heritage, while cocktails will reflect the store’s fragrance series.
An Artist in Residence programme will debut with Sir Quentin Blake, adding to the restaurant’s creative atmosphere.

Having been heavily involved from ideation, the concept, vision, menus though to the design, I am excited to see the all-day restaurant to come to life in the heart of London."

Caroline Watson, lead designer, at Thirdway added: “For this project, our aim was not only to capture the essence of the iconic Liberty brand but also to offer a fresh, innovative perspective on occasion, experience, and the true meaning of dining at Liberty.
“From the outset, we seamlessly integrated the brand identity of Goose + Berry alongside Liberty, ensuring that both brands harmonised within the design aesthetic of Seventy-Five. As a result, the design embodies an eclectic yet refined vision, blending contemporary dining with the rich, elegant atmosphere of the space.”
Seventy Five at Liberty will open on the second floor of the department store on April 8.
