Great British Menu 2021 chef Shannon Johnson is the new head chef at The Empress E9 in Victoria Park Village, East London 

29 year-old Shannon, who trained at Angela Hartnett's Michelin-starred Murano and until recently was the head chef at Pip Lacey's Coal Drops Yard restaurant Hicce, has joined the 2 AA Rosette Victorian pub in Hackney, which celebrated her appointment yesterday on International Women's Day:

The East London pub has a Michelin Bib Gourmand, and offers a frequently changing seasonal menu featuring produce from the restaurant’s neighbourhood suppliers – meat from Swaledale foods, fish from Fin & Flounder, bread from E5 Bakehouse & coffee from Climpson & Sons.

Originally from Lincolnshire, Shannon attended catering college before heading to Turnberry Hotel in Scotland. She moved to London when the hotel was bought by ex-US President Donald Trump, joining the team at Murano, before taking on the role of head chef at Pip Lacey's inaugural restaurant in King's Cross.
