France loses two 3-star restaurants but gains two new ones in the French Michelin Guide

According to the new Michelin France guide 2015 two restaurants have lost their three-star status although there is confusion over whether these have actually been lost altogether or whether they have been deleted or whether they have actually closed. We will bring you further clarification on this when we have it but what we do know is that Michelin have awarded France with two new three-stars.

Pavillon Ledoyen in Paris and La Bouitte in Savoy have joined the 3-star list consisting of 27 others whilst seven join the 2-star list and 37 more restaurants join the 1-star status.

Yannick Alléno from Pavillon Ledoyen in Paris said: "We will savour the moment with teams and clients.”

Maxime Meilleur, son of René, from La Bouitte said: “It's a delight to get to the top. Without this guide, we would not be here,"

"I am a former top athlete, these three stars, is like being Olympic champion with my dad!"

Those that join the 2-star list are La Grand'Vigne in Bordeaux, Auberge du Cheval Blanc in Lembach, Alain Ducasse at the Plaza Athénée in Paris, the Ninth Art in Lyon, Casadelmar in Porto-Vecchio, La Table du Lancaster in Paris and L'Atelier d'Edmond in Val-d'Isère.

And from Michelin themselves: "A superb promotion, which proves that the pool of major French tables do not dry up ,on the contrary!"

This new edition of the Michelin guide illustrates once again the extraordinary richness and dynamism of French regions. Thanks to a generous land and the unique diversity in the world, Michelin guide inspectors have unearthed beautiful tables remarkable quality, sometimes located in very small towns. This is the case of the Clair de Plume in Grignan (awarded one star) common to just over 1,600 inhabitants and Gaspard tables located in Saint Crepin (1 star), which has only 1,300 inhabitants.

Michelin also note the young generation continues to bring the future of French cuisine to the forefront with several young leaders getting their first star like Ludovic Turac, aged 26, at Une Table au Sud in Marseille or Joel Phillips, 27, from Esprit Terroir in Strasbourg.
