Former Gordon Ramsay chef announced as new head chef of Brave

Stephen Bunch has been appointed the new head chef of Brave, days after James Cochran’s departure.

Stephen has worked at Michelin Star restaurants including Maze by Gordon Ramsay and Morston Hall in Norfolk.

He was also head chef for two years at the London Shell Company.

With the new appointed chef, guests can expect a range of fresh dishes, including a 1kg Côte de boeuf steak designed for sharing, served with shallot purée and salsa verde as well as a daily market fish special, accompanied by brown butter, capers, and cockles.

The Brave offers 50 covers across a mix of cozy and open spaces, including a rear garden terrace. The main dining room looks onto an open kitchen, giving diners a glimpse of the action, while the front area provides a more relaxed, pub-style setting ideal for casual meals.

Days earlier, James announced a new residency at Kitchen No.8 in BOXHALL City, London.

Kitchen No. 8 will host a changing roster of top chefs throughout the year, complementing the diverse food lineup.

James said: “Throughout my career, I’ve championed bold flavours, diverse cuisines and, above all, creativity in cooking. This opportunity at Kitchen No. 8 in BOXHALL City will allow me to really get into a creative groove and test new dishes in such a beautiful and food-focused space, surrounded by a mix of global cuisines.

"Having worked in professional kitchens for nearly two decades, from the iconic Wheeler’s Oyster Bar as a teenager to my time in Michelin-starred kitchens, I’m delighted my journey as a chef has now led me in the direction of pursuing my own creative style and innovation. I can’t wait to get into the kitchen at BOXHALL City and start cooking up something exciting for the capital.”
