Chef and author Dan Doherty has been appointed chef partner for a new restaurant in New York, in partnership with London hospitality group rhubarb.

Following his announcement last month that he is leaving Duck and Waffle, Dan Doherty has revealed plans that he has been appointed chef partner for a new eatery in New York, in association with rhubarb.

The yet to be named restaurant, bar and terrace will be located on the fifth floor of the newly developed 30 Hudson Yards on Manhattan’s West Side and will be the first international location for the London hospitality group, that includes Sky Garden and the Royal Albert Hall amongst its portfolio. It is scheduled to open in March 2019.

Despite the restaurant being in New York, Dan will continue to be based in London but will be dividing his time between America and England in preparation for the launch. He said: “I love New York and have always been a fan of the food scene there, so I was really excited when rhubarb approached me to work as chef partner on the Hudson Yards project. It’s an incredible site, and with an all-day offer, there’s something for everyone. I’ll continue to be based in London, but will be spending a lot of time in New York from pre-opening to launch and beyond. I can’t wait to get in the kitchen!”

The restaurant, bar and terrace will be located on the fifth floor of the newly developed 30 Hudson Yards on Manhattan’s West Side. They will serve brunch to lunch and dinner and will have an ‘East meets West’ theme, inspired by Dan’s love of travel. Diners can expect to choose from the likes of Singapore chilli crab croquettes; Scallop, apple, kohlrabi & Chinese chilli oil; Beef fillet, chilli, daikon & soy-cured egg; Asparagus, sticky shiitake, brown butter hollandaise and Roasted & glazed herb fed chicken with chicken fat rice amongst others.

Weekend diners can expect to try Asian twists on traditional English breakfast dishes such as bibimbap with fried rice, egg, smoked bacon and spiced sausage to Korean pancakes, and black sesame waffles with smoked miso ice cream.

In keeping with the menu, the décor will also reflect Dan’s enthusiasm for ‘East meets West’ and will have light, bright and grand in form with natural textured materials, opulent tones, teak timber screens and oriental features, seamlessly blending industrial West with authentic East.

CEO of rhubarb, P.B Jacobse said: “We are delighted to partner with Dan, who offers a raw passion for food and an infectious energy. He also shares our ethos, which is to push the boundaries of food expectations and deliver something truly memorable. Hudson Yards is a development that will change the way New York lives, works and eats, and to be part of that is extraordinary for us all.”
