Chefs Rene Redzepi and Thorsten Schmidt announce new restaurant inside former Noma building
Former two Michelin starred chef, Rene Redzepi and Danish chef, Thorsten Schmidt of Malling & Schmidt, have today revealed plans to launch a new dining concept called Barr within the former Noma building. The restaurant is due to open next month on July 5, 2017.
In a blog post uploaded to the Noma website by Thorsten Schmidt it says: “For years, I have been talking with René about creating a new kind of restaurant in Copenhagen. We have been holding out for the perfect space – and we finally found it, inside the old home of Noma on the city’s iconic waterfront. Together in partnership, we are opening restaurant Barr, on Wednesday, 5th July.”
The 60 cover restaurant, which takes its name from the old Nordic word for ‘barley’, promises to give a new twist on Nordic cuisine with a 17 item à la carte menu drawing inspiration from the North Sea which spans Scandinavia, Benelux and the British Isles. The menu will change with the seasons and a Sunday lunch menu will also be available.
In the blog Thorsten said: “The cooking of this region has always fascinated me – from classic dishes like the humble frikadeller (Danish meatballs) and schnitzel, to the use of marmite in cooking in Britain. At Barr, we will serve familiar foods in the best way we can, building on the last decade’s gastronomic development in Copenhagen.
“We want to carry on the spirit of experimentation and knowledge, serving our versions of traditional dishes, along with a great selection of beers and aquavit from this extraordinary area.”
Rene and Thorsten have been friends for years with Thorsten even helping Rene in the Noma kitchen for a couple of weeks when it first opened.
Rene closed the doors of his two Michelin-starred restaurant, Noma back in February and has since been running a pop up in Mexico.
In March Rene announced restaurant manager, James Spreadbury; service director, Lan Richter; and dishwasher, Ali Sonko as his new partners.
