Carousel head chef to take up first solo residency

Carousel restaurant in Marylebone has announced that head chef Ollie Templeton will take up his first solo residency in the kitchen for four weeks from Tuesday 5th May.

Having worked as sous chef at Moro restaurant in Exmouth Market, London, Ollie has continued to develop his cooking skills working alongside the line-up of chefs that have hosted residencies at Carousel since it open in August 2014.

Working with his own in-house team, Ollie will now offer guests the opportunity to try his own menu, offering lunch and dinner service at the restaurant for the first time.

Drawing inspiration from his childhood growing up in southern Spain, Ollie will put a modern twist on traditional Spanish flavours with an emphasis on locally sourced British seasonal ingredients.

The menu includes lamb’s heart with tomato, sesame and manchego , as well as vegetarian dishes like  Broad beans, peas, bottarga and wild garlic with sorrel vinaigrette.

Ollie’s menu will be available as a one to three-course lunch and a four-course dinner menu, from Tuesday to Saturday between the 5th- 30th of May.

Carousel has also announced its spring guest chef line-up, which will continue to showcase both established and up-and-coming chefs from around the world, hand-picked by Ollie and the Carousel team.

Each guest chef will work closely alongside Ollie to develop new menus that reflect their unique and individual cooking styles.

The spring series kicks off with Lee Skeet, at Carousel until 28th March, with a menu of innovative and experimental dishes reflecting his love of the sea.

Lee will be followed on 31st March by Gary Hoopengardner and his talented team from celebrated Berlin eatery Lokal and on 14th April Bjorn van der Horst will bring his many years of Michelin cooking experience to the Marylebone kitchen.

Leading food writer and cook Rosie Birkett will be in the kitchen from 28th April, showcasing creative recipes from her new book ‘A Lot on her Plate’.

Head chef Ollie Templeton will then take his place in the kitchen from the 5th May.

Each Carousel presents…set dinner menu is £35 per person, with set lunch from £9.50 for one-course. Lunch service is between 12pm and 3pm, with one dinner sitting from 7pm, Tuesday through to Saturday.
