Andy Lambert named head chef at Adam Byatt's Bistro Union
Ex-head chef at The Canton Arms Adam Lambert has been named head chef at Bistro Union, the sister venue to Michelin-starred Trinity Restaurant in Clapham
As first reported by Catering Today, the chef will take the reigns and relaunch the menu in an imaginative, innovative, and "brilliantly British" way.
He is taking over the role from Joshua Hooper, and will continue creating seasonal menus using produce sourced from local suppliers.
Andy left his position at The Canton Arms in Stockwell in mid-January after seven years at the award-winning gastropub, prior to which he worked at Urban Bar and Brasserie, The Goat Bar and Central Market, the Michelin Guide listed, AA Rosette restaurant.
During his time at The Canton Arms, the modern British gastropub was consistently included in the Michelin Guide, Good Food Guide, Estrella's Top 50 Gastropubs, and was also nominated for a GQ Food Award.
Adam Byatt opened Bistro Union in 2012, a relaxed and all-day dining environment, located on the other side of Clapham Common to his Michelin-starred flagship. The restaurant offers a menu of small and large plates and a set three-course menu for £40.
