Fresh Wild Mushrooms & Truffles


Girolles in adult and baby form are coming from various parts of the former Soviet Union & Poland.
Quality and price are both excellent, with not far to go before the crop peak.

The mighty Scottish girolle has started, and we have a small shipment of what promise to be out of the ordinary girolles coming out of the Baltics for Tuesday’s deliveries.

The ever popular, splendidly gothic trompette mushroom is in great shape from the topsy turvy microclimate of Bulgaria, and replaces the now tired mousseron in our mixed mushroom trays.

Summer truffles are so abundant from the boot that the Italian countryside must be full of holes. Affordable enough to use as dairy free parmesan.

 

 

Fruits


Golden raspberries are in good supply, for those who want to raise eyebrows with their fruit garnish.

Vegetables


 

One of our Scotland based foragers is busy supplying us with pineapple weed. Like so many wild foods it has many synonyms.

We like the humble “pineapple weed” as it looks a bit scruffy but exudes a pineapple scent when crushed.

Use in infusions or as a really wild addition to a salad.

What could be more enjoyable than a traditional French lemon tart as temperatures soar.

Cut to the chase and compromise nothing on quality with our excellent crushed lemon puree from Sicoly.

Just enough zest and texture to replicate careful and time swallowing fruit preparation.
