We have reached the final week of May and rapidly approach the first official day of summer in the UK, the 21st of June.

Just a quick update below touching on some highlights and changes.

Wild Mushrooms & Truffles

We enter the last two weeks or so of the morel season with origins switching now from Turkey to Bulgaria & the USA.

Mousseron supply is strong, but the St George season is now closing.

Girolle supply improves weekly, with excellent small and medium sized mushrooms now coming from Bulgaria and Serbia.

This lovely apricot scented wild mushroom is the fungal star of the summer.

When Scotland and Eastern Europe kick off by early July, you would be a brave chef not to find a place for them on your menu.

Summer truffles are fantastic value as Italy is enjoying a bumper crop this year.

Fruit

We are getting a test shipment of the mighty Mara Des Bois strawberry from France this week.

In essence a plump, succulent wild strawberry scented cross breed.

Lets see how they travel across La Manche.

Elderflowers from Norfolk have joined the party. Enjoy diffusions or classically deep fried in a light batter.

Vegetables

We are giving French Frisee leaves some focus next week.

The real deal with the creamy heart.

This endive or chicory family member  is the star of a classic Lyonnaise, salad which is screaming to be eaten both traditionally and in deconstructed forms.

Ambient Corner

Our ever evolving Sosa range of modern gastronomy ingredients comes into it’s own as the weather improves.

Fruit crispies, ice cream/sorbet stabilisers and a gigantic range of labour saving lines give a real competitive edge to desserts.
