Wild Mushrooms
Prices have dropped enough & varities are solid enough to liven up ye old cultivated & wild mixed mushroom code.
Here’s what you will get if you order it.

- Girolles

- Pied Bleu
Girolle and mousseron prices have come down. Girolle sizes will be varied for the next couple of weeks until flushes go ballistic in Central and Eastern Europe. I’m only touching other varieties of wild mushroom if I see that they are good.
Truffles
Now is the time to preserve if that’s your bag.
Fruits
Our friendly wild strawberry farmer in Kent has colour but no aroma on his fraise. How is that for honesty?
The more traditional Elsanta strawb is now flourishing in Somerset however. Just in time for Wimbledon.
Stone fruits now available from Spain.

We just have to wait for the lovely late showers which are blood peaches & nectarines and we have a full compliment.
Apricots & cherries are improving by the day.
Without wishing the summer away, next stop plums.
As much as I avoid air freight where I can, I love the complex flavour of quince so much that it would be remiss of me not to mention the mighty fine South African and Chilean product available.
Try it poached down and added to a ham hock terrine.
Vegetables
For an elegant farcie and a salute to Provence, green & yellow round courgettes abound. A.K.A. hand grenade courgettes (which always makes me chuckle like a child).
No other major shifts from previous updates.
From the UK’s Wilds
Fish friendly wood sorrel, & rock samphire from Scotland.
Fruit filled pineapple weed also from the Highlands.
Elderflower is starting to show but supply is as yet sporadic,
Superb for infusions or fairy-light fritters. A real taste of the English summer. We sell the berries when ready, which knit nicely with the game season.
Not long now until the wild pea flower. One of my personal favourite foraged fancies.
Wild leek seed bobbles and shed loads more.
