Here at The Staff Canteen, we feature a different member every month who we think deserves to be celebrated - this month’s winner is Andrew Foye.
As thanks for being a regular contributor to The Staff Canteen, Andrew will receive a TSC mug, and be entered in our Member of the Year 2024 competition.

Current Place Of Work/Position?
I'm currently head chef at Rockvilla Hotel in Lochcarron
Rockvilla is a small, family-run boutique hotel, restaurant and bar situated in the village of Lochcarron, which is part of the renowned North Coast 500 route.
What is your cooking style and what should people expect from the food on your menu?
French and Scottish cuisine but with a modern twist.
What is your favourite dish to cook and why?
It varies from menu to menu, but usually, it's the specials as they come to fruition by interest and creativity.
Name a food item/dish/ingredient that isn’t considered “cheffy” but that you love to eat
McDonald's for a quick cheat meal
What do you like about The Staff Canteen app and website?
They're attentive and usually have a response and clarity when I'm looking for something.
What are your plans for the future?
I plan to continue creating tasting menus, earning rewards, and potentially owning my own restaurant in the future.
What is the most important lesson you’ve learnt as a chef?
Mise en place is by far the most important; as the saying goes, "By failing to prepare, you are preparing to fail".
