Member of the Month July 2023: Dominic Aslett
Here at The Staff Canteen, we feature a different member every month we think deserves to be celebrated - this month’s winner is Dominic Aslett.

Current Place Of Work/Position?
Head Chef, Blakeney House, Blakeney, Norfolk.
What is your cooking style and what should people expect from the food on your menu?
I guess I would call it modern British but I'm not afraid to use other cultures and influences, but the plate would undeniably speak British.
People should expect clean lines in regards to my plating style, and that speaks in the eating also, with no more than 3-4 flavours on a dish, with the chosen star of the show at the forefront.
My favourite dish to cook would be anything sugar related! I'm real hands on in pastry and always have been, if you put me on the spot for a dish, I'm just going to have to say a perfectly executed Creme Brulee is hard to beat!
Name a food item/dish/ingredient that isn't considered "cheffy" but you love to eat?
Peanut butter, a really top quality dark roasted variety, for me it's a replacement for a tub of ice cream whilst watching a movie haha, just give me a spoon!
What do you like about The Staff Canteen app and website?
I think what you guys have created here to allow fellow chefs to post their food for our peers to see, our idols, the ones we look to for inspiration, it's just great! And it pushes us all, I just see greatness in every plate of food I've seen uploaded, all different, but great in their own ways.

What are your plans for the future?
Well I always wanted to achieve my own 2 Rosettes, which I've recently done. Of course I would love a third, who wouldn't! We'll see what the future holds.
Which chefs inspires you the most and why?
When I was younger this was a straight forward answer, the likes of Gordon Ramsey, Marco Pierre White, Raymond Blanc.
When I first started out in my career it was TV chefs or cookbooks for inspiration, I still lovingly care for my 'Wild Food From Land And Sea' by Marco Pierre White, an absolute classic book by the way. But now we have access to so many great chefs literally in our palms on a daily basis.
There's too many to mention, but I respect them all.
