Here at The Staff Canteen, we feature a different member every month we think deserves to be celebrated - this month’s winner is Russ Crisostomo

Current Place Of Work/Position?
Head Chef of Paris Bar and Restaurant Nottingham.
What is your cooking style and what should people expect from the food on your menu?
I would say my style of cooking is unorthodox, as long as I enjoy what I do and it makes me happy.
At the minute, I work in a Paris inspired restaurant, Paris is a multicultural city where one can travel the world by just strolling or trying a different type of cuisine within the city and that’s where we get our food concept from, people should expect a world wide type of cuisine on our menu.
What is your favourite dish to cook and why?
I would say Venison and Pork.
Venison because I just like that feeling when you cooked a venison loin perfectly.
Pork because In the Philippines where I grew up, we use pork on pretty much everything and when I cook pork, mainly pork belly, it just reminds me of home.
Name a food item/dish/ingredient that isn't considered "cheffy" but you love to eat?
Spam Coated with egg then pan fried, paired with hot steamed rice, accompanied with tomato and soy sauce and lots of chilli oil!! YUM
What do you like about The Staff Canteen app and website?
The website gives me confidence to post the dishes that I created without being judged, and I learn a lot from other members’ post as well.
What are your plans for the future?
I wanna have my own restaurant someday and use the country I grew up from (The Philippines) as a concept, I want Filipino cuisine to be discover more in the UK and around the world.
Do you have any new years' resolutions?
I don’t believe in New Years’ Resolution, I believe people will change on their own time when they’re ready.
