Mark McCabe and Matthew Pennington, the visionary co-owners of The Ethicurean, epitomize a harmonious fusion of culinary innovation and sustainable ethos. Their shared passion for conscientious dining has propelled The Ethicurean to the vanguard of ethical gastronomy, leaving an indelible mark on the culinary landscape, awarded with a Michelin Green Star and The Staff Canteen Sustainable Business of the Year Award 2022.

Mark McCabe's journey towards co-founding The Ethicurean was guided by a deep-rooted connection to nature and a fascination with traditional foodways. Raised amidst the verdant landscapes of Somerset, Mark's early exposure to locally sourced ingredients and time-honored cooking techniques forged his commitment to preserving the integrity of the environment within the culinary realm. His entrepreneurial spirit and dedication to sustainability have been instrumental in shaping The Ethicurean's identity.

Matthew Pennington, the other driving force behind The Ethicurean, brings a wealth of culinary expertise and artistic flair to the table. Matthew's culinary journey began in Somerset as well, instilled with a reverence for organic ingredients and a passion for innovative flavour profiles. His time spent in prestigious kitchens honed his culinary skills and honed his commitment to crafting exquisite dishes that celebrate the terroir of the region.

Matthew said, "Every element of our menu is designed to reduce food waste, and we support pasture-reared meat and sustainable seafood projects. We are a registered Living Wage employer and challenge some existing practices within the restaurant industry."

Together, Mark and Matthew's shared vision materialized in the establishment of The Ethicurean—a haven where culinary creativity intertwines with sustainability. The restaurant's menu, a testament to their culinary ingenuity, is a tapestry of seasonal delights sourced predominantly from their own garden and local purveyors who share their dedication to ethical sourcing.

Mark McCabe and Matthew Pennington, as co-owners of The Ethicurean, have not only redefined dining but have also woven a narrative of conscious consumption and ecological mindfulness. Their legacy resonates in each thoughtfully crafted dish, inviting patrons to savour not just flavours, but a profound connection to the environment.
